What's in the box this week?

Eggs from our pasture-raised, certified organic, happy hens.

Baby Salad Mix Our six-variety blend of baby salad greens, cut fresh and delivered within a day of harvest.  Store in its plastic bag, in your crisper and use within 3-5 days.

Arugula A delicious, tender salad green that adds some pepper spice and earthy flavors to your fresh salads.  Although used as a salad green, it is actually a member of the brassica family, and is thought to be a good detoxifier.  Chop it up and add it to your salad mix for some zest, or, cook it very lightly to mellow out some of the peppery flavors.  Arugula pesto is a great year-round alternative to basil pesto for pastas. (We're planting basil this week!)  Its earthiness pairs well with mushrooms and stronger, saltier cheeses like parmesan or gorgonzola.  Store this bag in your crisper as well.

Nantes Carrots A healthy bunch of finely-grained carrots with old-school flavor.  We're so glad to have our carrots back.  Their flavor becomes even sweeter when cooked.  Remove the tops for longer shelf-life when stored.

Lacinato Kale This nutritional powerhouse just screams "eat me" with its blue-green color.  Remove the stem (if you want) and chop the leaves.  Simply saute with our green garlic, a squeeze of lemon, sea salt, and olive oil.

Spring Shallots Shallots earn a special culinary status with their nuanced, delicate onion flavor.  Finely chopped, soaked in wine vinegar, then whisked with olive oil, they make an excellent vinaigrette.  Grilled shallots are a must if you're firing up the barbeque.

Green Garlic
