Snow Leopard Honeydew Melon This sweet, white-fleshed melon has a more firm, crisp texture than regular green-flesh honeydew. They’re lovely eaten simply with a squeeze of fresh, lime juice, wrapped with prosciutto, or on a fruit salad skewer.

Fisher’s Sweet CornHusk your ears of corn before placing them in plastic bags for refrigerator storage.   This is organic sweet corn, unsprayed with pesticides, so you should expect earworms.  They’re harmless and do not affect the fruit other than the areas they have already chewed.  Simply pick them off and enjoy the rest of the ear. Learn to share!  This earliest yellow variety will give way to the sweeter Luscious bi-color next week.

Mixed Sweet PeppersThe star of this week’s recipe!

Cherokee Purple Tomatoes This cultivar of tomato is unusual for the deep purple/red hue of its fruit, with green ‘shoulders’ across the top.  It is beefsteak in style, so slice them for a sandwich, burger, or include them in your next summer salad! 

Zucchini/Summer SquashPlace your summer squash in a plastic storage bag before refrigerating.  Wrap the bag tightly around the squash, squeezing out as much air from the bag as possible.  By minimizing its contact with air, you can almost double its storage life by slowing its rate of respiration (summer squash continues to breathe even after it has been harvested!) and prevent your veggies from becoming soft. Never wash your summer squash prior to refrigeration, or it will spoil.

Black Bean, Corn, and Sweet Pepper Salad with Lime Cilantro Vinaigrette (Serves 6-8)

A delightful summer salad that uses many of this week’s CSA box ingredients.  Feel free to make ahead of time, because it continues to get better as it sits!  Thanks to Serious Eats for the recipe!

15 oz black beans, cooked

3 ears fresh cooked corn, kernels cut off the cob (approx. 2 c)

2 sweet peppers, diced (about 2 c)

2 medium cloves garlic, minced (about 2 tsp)

2 tbs minced shallots, from one medium shallot

2 tsp salt

1/4 tsp cayenne pepper

2 tbs sugar

1/2 c plus 1 tbs extra virgin olive oil

1 tsp zest and 6 tbs juice from 5 to 6 limes

1/2 c chopped fresh cilantro leaves, plus more for garnish

2 Hass avocados, chopped

Combine all ingredients except for avocados in a large bowl and mix well. Cover and chill at least 30 minutes and up to over night. Right before serving, add avocados and fold gently, being careful not to mash avocados. Garnish with more chopped cilantro if desired. Serve at room temperature.  Delicious!
